Oatmeal Muffin Recipe
Prep Time: 15 minutes
Bake Time: 18 to 22 minutes
Yield: 8 to 12 muffins
Ingredients
1 cup rolled oats
1 cup buttermilk
1/2 cup butter, melted
1/2 cup whole wheat flour
1/2 cup white flour
1/2 cup sugar or packed brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
Recipe Instructions
Adjust oven rack to center position oven and heat oven to 400 degrees F. Grease cups of a 12-Cup Muffin Panor line with paper liners.
Mix together the oats, buttermilk and butter and let sit in a warm place to soften while mixing the rest of the ingredients. In another bowl whisk together the flours, baking powder, baking soda and salt . Add egg to oatmeal mixture and blend well. Stir in the flour mixture just until blended.
Divide batter evenly into greased muffin cups. Bake 18 minutes or until golden and a toothpick inserted comes out clean. Remove from the oven and let cool in pan set on a wire rack for about 5 minutes then carefully remove the muffins and set them on the wire rack to finish cooling or enjoy warm.
Variations
VARIATION 1: Stir in 1 cup chopped pitted prunes or other dried fruit of your choice
VARIATION 2: Stir in 1 cup fresh berries or chopped fresh fruit of your choice
Healthy 8-Grain Muffin Recipe
Prep Time: 10 minutes
Soak Time: 20 minutes
Bake Time: 15 to 20 minutes
Yield: 12 muffins
Ingredients
1-1/4 cups buttermilk
1 cup 8-grain or other multi-grain hot cereal
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 large egg
1/2 cup packed light brown sugar
1/3 cup canola oil
1 teaspoon vanilla extract
Recipe Instructions
Combine the buttermilk and cereal in a large bowl and let soak for 20 minutes before proceeding with the recipe.
Position an oven rack in the middle of the oven and heat the oven to 400 degrees F. Grease the cups of a 12-Cup Muffin Pan.
In another large bowl stir together the flour, baking soda, baking powder and salt until well combined and set aside. Whisk the egg, brown sugar, oil and vanilla into the cereal mixture until well blended. Add the cereal mixture to the flour mixture and stir until just blended.
Distribute the batter evenly among the cups of the muffin pans. Bake for 18 to 22 minutes or until the tops are golden and a toothpick inserted into the center of the muffins comes out clean. Remove from the oven and let the muffins cool in their pan on a wire rack for about 5 minutes, then remove them from the pan and place them on the wire rack to cool.
Cranberry Muffins
Prep Time: 15 minutes
Bake Time: 22 minutes
Yield: 12 muffins
Ingredients
1 cup all-purpose flour
1 cup whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup granulated sugar
1 egg
2/3 cup milk
1/4 cup butter, melted
2 teaspoons finely grated lemon or orange zest
1 teaspoon vanilla extract
1 cup coarsely chopped fresh cranberries
Recipe Instructions
Adjust oven rack to center position oven and heat oven to 400 degrees F. Grease cups of a 12-Cup Muffin Pan.
In a large bowl, whisk together flour, baking powder and salt. In a separate bowl, whisk together sugar, egg, milk, butter, lemon zest and vanilla until well blended. Add the egg mixture to the flour mixture and stir until just blended. Gently fold in the cranberries.
Divide the batter evenly among the prepared muffin cups. Bake in the heated oven until a toothpick inserted in the center comes out clean, 17 to 22 minutes. Remove from the oven and cool in pan on wire rack for 5 minutes, then carefully remove each muffin from its cup and transfer to the wire rack to finish cooling.
Orange Prune Muffins
Prep Time: 15 minutes
Bake Time: 27 minutes
Yield: 12 muffins

Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raw sugar
1 egg
1 cup plain low fat yogurt
1/4 cup canola oil
1 tablespoon finely grated orange zest
1-1/2 cups pitted prunes, finely chopped
For the glaze (optional):
1/2 cup confectioner’s sugar
1/4 teaspoon finely grated orange zest
1-1/2 teaspoons orange juice
Recipe Instructions
Position an oven rack in the middle of the oven and heat the oven to 350 degrees F. Grease cups of a 12-Cup Muffin Pan
or line with paper liners.
In a large bowl, whisk together the flours, baking powder, baking soda and salt. In another bowl, whisk together the sugar, egg, yogurt, oil, orange zest and vanilla until well blended. Add the egg mixture to the flour mixture and stir until just blended. Gently fold in the prunes.
Divide the batter evenly between the prepared muffin cups. Bake in heated oven until the tops are golden and a toothpick inserted in the center comes out clean, 24 to 28 minutes. Remove from the oven and transfer the pan to a wire rack. Cool the muffins in the pan for 5 minutes and then carefully remove each muffin from its cup and transfer them to a rack to finish cooling.
While the muffins are cooling stir together the icing ingredients in a small bowl. Drizzle over the muffins while they are still warm and then let cool.
