Sausage and peppers is an Italian-American classic that makes a great quick easy dinner.  It’s also a perfect recipe when you need to feed a crowd. And now that there are so many tasty chicken and turkey sausages to choose from, it can be really healthy too.

I love making pumpkin muffin recipes with canned pumpkin puree.

If you’re looking for easy tasty healthy blueberry muffin recipes, you’ve come to the right place.

Blueberries are healthy but unfortunately, most blueberry muffins found at the grocery store, coffee shop or bakery are not. They are huge calorie and sugar bombs that are a whole lot more like cupcakes than muffins.

Here are my four favorite healthy bran muffin recipes. I know it’s a little strange to have four favorite recipes for bran muffins, but I’ve been a bran muffin fan forever.

Unfortunately, the bran muffins you buy in bakery and coffee shops can be hazardous to your health and waistline.

Years ago I used to begin my day with coffee full of cream and sugar and a Dunkin’ Donuts honey bran muffin, thinking I was being healthy. I couldn’t understand why I had a hard time losing weight since I walked miles and did Aerobics almost everyday.

Imagine my shock and dismay when I discovered that this supposedly healthy food had 490 calories, 15 grams of fat and 44 grams of sugar. (I would have been better off eating their Boston Kreme Donut, which has 310 calories and16 grams of fat and 16 grams of sugar.)

I love to have healthy banana muffins around for both easy healthy breakfasts and afternoon snacks.

Most of the muffins you find in coffee shops, bakeries and grocery stores are really more like cupcakes – filled with sugar and high in unhealthy fats. Almost any muffin you make at home from scratch will be a better for your health and waistline.

There are lots of easy ways to boost their health even more. You can use wholegrain flour for all or part of the white flour. Use less oil or sugar. This is especially easy with healthy banana muffins. When you use really ripe bananas they provide a lot of natural sweetness so you need less sugar.

There are lots of ways to make muffins healthy. The key is to find the balance between taste and health so that the muffins taste delicious, not heavy or rubbery.

Some of my favorite ways to make muffins healthier include using whole wheat flour in place of some or all of the all-purpose flour, substituting applesauce for some of the oil and adding healthy ingredients like apples, oats, nuts and cranberries.

Here are two healthy easy recipes for chicken and dumplings – one cooked on the stove and another that cooks in the slow cooker.

If you love chicken and dumplings made from scratch but don’t have the time or desire to cook the chicken, cool it and then remove the skin and bones, here are two great quick and easy alternatives that use already cooked chopped chicken and chicken broth instead.

I never make chicken and dumplings from scratch. Instead I make it when I have leftover chicken to use. It’s so much easier.
